Harvesting a Rainbow of Tomatoes! - Stephenson

If you have been in the garden or the local farmers' markets lately, perhaps you have started seeing the beautiful colors of tasty ripe tomatoes. You know, the various shades of red, purple, yellow, and green, signaling that tomato season is in full swing. If not, fear not. Those mouth-watering globes of goodness will be ready before you know it.

There are numerous varieties of tomatoes, and they are relatively easy to grow, producing several pounds of tomatoes per plant. This often leaves gardeners with ample tomatoes to eat, preserve, or share with friends and family. If you are fortunate enough to have an abundance of tomatoes this summer, find someone to share them with or consider donating them to your local food pantry. 

Tomatoes truly are an American favorite, and because they are so versatile, they can be found in countless entrees, side dishes, condiments, and even beverages. This class will discuss why tomatoes are a healthy addition to your diet, how to select, purchase, and prepare different varieties of tomatoes, which variety works better than others for making salsa, and how to store them to extend their shelf life. We will also share tasty recipes to try at home as you explore new flavors and discover what varieties of tomatoes work best for you.
